Let’s face it, finding easy new vegetarian recipes can be a challenge. But, thankfully, there are many great new recipes that can be prepared in just minutes.

Black Bean Tacos

Tacos are blessed with the power that, most of the time, you can throw just about anything into them and, hey presto, a delicious meal is created. Though, tacos also benefit from a carefully crafted combination of ingredients, which gives the best results.

Hence we have the black bean taco. As far as actual cooking is required, there basically isn’t any, which makes this the lunchtime meal of those who are particularly busy.

All you’ll need is arugula, black beans, pickled radishes, some feta, and jalapeno-lime dressing. Heat up the beans, toss them into a taco, and add the other ingredients to create a delicious combination of spices, crisp crunches, and pepper. It can be prepared in just a few minutes, and is light but filling.

Greek Broccoli Salad

As far as an interesting combination of ingredients goes, this is one that deserves some kind of medal. It takes just 15 minutes to prepare, and is just about as healthy a meal as could be asked for.

For the main meal you will need a bunch of broccoli, sun-dried tomatoes, chopped red onions, feta, and sliced almonds. The dressing consists of olive oil, lemon juice, a teaspoon of honey, a clove of pressed garlic, a half teaspoon of oregano, a half teaspoon of Dijon mustard, a quarter teaspoon of salt, and a pinch of red pepper flakes.

Preparation is as easy as tossing the broccoli, tomatoes, diced onions, feta, and almonds into a bowl. Whisk the dressing ingredients, and pour over the broccoli. Hey presto, you’re done! Since it refrigerates well, you can enjoy anywhere, and any time.

Black Bean And Avocado Burrito Bowl

Last we have the black bean and avocado burrito bowl. You will need a cup of brown rice, with a quarter teaspoon of salt.

The lime marinated kale will need a bunch of kale with ribs removed, a quarter cup of lime juice, 2 tablespoons of olive oil, a half a jalapeno, a half teaspoon of cumin, and a quarter teaspoon of salt. The avocado salsa will need a pitted, sliced avocado, a half cup mild salsa Verde, a half cup cilantro leaves, and 2 table spoons of lime juice. The black beans will need 2 cans of black beans, diced red onions, 3 cloves pressed garlic, a quarter teaspoon of chili powder, and a quarter teaspoon of cayenne pepper. For garnish, cherry tomatoes and hot sauce.

Cook the rice; bring it to a boil, drain, and add salt. For the kale; whisk the ingredients, toss into a bowl with the kale. For the salsa; blend the avocado and other ingredients. For the beans; warm them in a saucepan, sauté the garlic and add to the beans, cook for about 5 minutes. Add the pepper and chili powder.

Serve with the rice, top off with the tomatoes.
